1916年創業。北海道内で最も注目されている蔵の一つであり、一番南に位置する酒蔵でもあります。近｢水｣･｢空気｣･｢環境｣にこだわり続ける水口渉杜氏の冴えた技が光る、「彩り（いろどり）シリーズ」が近年は人気沸騰中。水はニセコワイス山系の雪清水と、羊蹄山からの｢噴出し湧水｣を使用。蔵の裏山の噴出し湧水を2キロ近く自家パイプで蔵まで引いています。蔵は道内屈指の豪雪地域で、蔵全体がかまくら状態になり熟成には最適な環境となります。
Founded in 1916. It is the brewery of sake which is the most noteworthy in Hokkaido. It is located in the south in Hokkaido. Mr. Mizuguchi, who is responsible for
making sake, continues to stick to “water”, “air” and “environment”. Recently
“coloring series” is very popular. Water uses Niseko Weiss mountain water and
water from Mt. Yotei. We are pulling out the spring of the backyard of the
warehouse to the brewery with a self-contained pipe near 2 kilometers of spring
water. This area is a famous heavy snowy area in Hokkaido. The whole building is
buried in snow. That state is the optimal environment for “aging”.
